MATASOLAN

At an altitude of 1,000 meters, in the foothills of the Pallars Jussà Pyrenees, a high mountain region where the olive tree defies the climate and the altitude, grow our most emblematic olive trees. It is our flagship estate, the most unique and emblematic of CabiOli.

Comprising several plots, its restoration has been a work of years: in some, only a few centuries-old olive trees remained, which we have managed to rescue with patience and respect. Today, in these cold, stony lands, unique varieties such as Llargueta del Pallars, Cua de Cirera, and Albacarro grow—native and almost forgotten. Among them, specimens with genetic connections to Syria stand out, a living testament to the history of the olive tree.

The olive trees of Matasolana are true ancestors of the modern olive grove, the genetic progenitors of many of today's olive trees. Adapted to the cold, with winters reaching -10°C and surprisingly cool summers, they have developed a unique resilience and character. In the past, they were pruned into a conical shape, like fir trees, reaching up to ten meters in height. We have carried out extensive rejuvenation and restoration work, working to restore both the trees and the dry-stone walls that structure the estate.

The stony soil, with its high pH, ​​subjects the olive trees to natural stress that intensifies their aromas and nutritional value. The result is oils with exceptional organoleptic characteristics, a pure reflection of an extreme, legendary estate steeped in history.

Alentorn

At an altitude of approximately 450 meters, this plot of land near the village of Alentorn exemplifies how tradition and nature can coexist harmoniously. Although it had fallen into disuse, its restoration was simpler than that of Vilanova, where the forest had almost completely reclaimed the property and years of work were required to bring it back to life.

Built with dry stone walls and centuries-old olive trees, Alentorn preserves the essence of a Mediterranean farming tradition that has endured for centuries. On many of its terraces, olive trees alternate with ancient vineyards, following a traditional practice that made the most of the land and ensured the resilience of the crop. This combination allowed for two complementary harvests, reduced the impact of droughts, and maintained a diverse and balanced agricultural ecosystem. Today, this heritage inspires us to work the land with the same respect for the landscape, sustainability, and quality that guided those who cultivated it before us.

Its east-west orientation affords it long hours of sunshine, allowing for complete fruit ripening and a greater concentration of aromas and flavors. Although the terraced terrain makes the work more challenging, it also multiplies its richness. Today, Alentorn is our most productive estate: a generous land that, with care and respect, has once again yielded its very best.

VILANOVA

This estate, situated at approximately 670 meters above sea level in the town of Vilanova de Meià, is a symbol of restoration and respect for the land. When we acquired it a decade ago, the estate showed the natural effects of time: the stone walls required maintenance, the forest had encroached upon the olive groves, and the trees had grown with insufficient sunlight.

The task was monumental. We began by restoring light and air, clearing the forest that had taken over the property, rebuilding the dry stone walls, and restoring the original land levels. Little by little, the land began to breathe again. We introduced ground cover, gentle pruning, and a continuous soil regeneration process.

Today, the estate is alive again. Its olive trees, primarily of the Verdiell, Cua de Cirera, and some Arbequina varieties, produce an organic oil that reflects the altitude, effort, and patience invested in its revival. Every drop is a testament to slow, respectful work, deeply connected to nature.
